If you change the name of an appeal or a fund from it's appeal/fund record, the appeal's/fund's new name would appear in any gift records or on the appeal tabs that have that fund/appeal associated with it, right?
Is there any negative to doing this versus importing corrected information into RE or doing this instead of globally changing?

We've done it numerous times without any consequences. I think changing it on the record itself is the best way. Good luck!

So long as you are sure you want this change wherever this appeal/fund exists in the database (even on historical gifts) there is no reason not to just change the appeal/fund record.
As long as it doesn't change the meaning of a historical gift I'd say that's the best way to do it. You just have to make sure that if you ever have to report on someone's giving it doesn't show them giving to something other than what they gave to.
