You may as well bite the bullet, so to speak, and upgrade, as it sounds as if you almost have to with purchasing the maintenance reinstatement deal.
If you are more or less starting from scratch, I think it's a good idea to start with 7.81. BB will encourage you to upgrade every time you have a question anyway.
We certainly never upgrade to the latest version as soon as it's available. But, 7.81 has been around awhile, there are a load of patches that have been issued, so it's probably a good time now to go for it.
You may as well start building your database with a more current version since, as you said, you "won't know any different".
